Beginning Sign Language
An introductory course designed for those with no prior exposure to American Sign Language. The emphasis is on awareness of the deaf culture, basic lip reading skills, and some basic conversational signs. Mary Nelson is an active interpreter and is active in the deaf community. Entertaining and Party Planning
This class will answer questions about cooking for a dinner party and provide tips on how to be the “Hostess with the Mostest”. The first five weeks will cover simple appetizers and explore fun ways to make ‘table scapes’ from available household items. Week six will feature a full party buffet, complete with food and a beautiful table. Class includes culinary tastings and copies of recipes and tips. Gardening for Seniors
This class will discuss how to grow vegetables, fruits, and maintain the landscape. Topics to be discussed include: (1) Why soil testing is important and what fertilizer to buy, (2) How to easily take care of the lawn, (3) How to grow vegetables in the sandy soils and what fruits will grow here, (4) What are beneficial insects and what can you use as a natural insecticide. Intermediate Italic Calligraphy Prerequisite: Beginning Italic Calligraphy. Learn to write Italic Calligraphy with the fine point pen. Complete projects using a combination of various nib widths. Watercolor I
This two-period course is an exploration of the dynamic nature and spirit of watercolor. The course, along with a tutorial, covers a variety of watercolor processes through short lectures, demonstrations, and hands-on practice. Basic watercolor materials will be required. The material list, provided separately, is designed to keep the cost at a minimum. For participants who do not have watercolor supplies, an optional watercolor kit will be available to purchase for a fee of about $60 on the first day of class. Wellness Through Movement
Participants will learn how to use body movement in an office or home setting to reduce stress, alleviate physical tensions, and cope effortlessly with occupational and personal demands. Belly Dance
Belly Dance can energize the body and inspire the spirit! Drawing inspiration from many traditions of women’s dance, this is a gentle and fun way to increase strength and flexibility. Computer – Digital Image Editing Prerequisites: (1) Access to a computer with a Windows desktop, (2) Ability to open multiple programs, (3) Ability to minimize, maximize and restore Windows, (4) Ability to drag and drop using a mouse, (5) Ability to use scroll bars to position items, and (6) Ability to open Windows Explorer to expand/collapse folders. Students must be comfortable with creating, renaming, and deleting files, folders and subfolders. Exploring Artist Book Structures
The class will present a history of paper and books. A series of books beginning with simple sewn books and progress through a variety of book structures will be made. The focus of the class will be learning construction techniques of books with objective of creating artist books by encouraging students to personalize with narrative and imagery. Ms. Hansel has explored bookbinding and book arts for five years. She has taught bookbinding at Panama City Artists workshops and the St. Andrews Panama Printing Plant. This class is great for the beginner or the more advanced. Focus will be on learning to draw and improving skills. History of Ancient Egypt (Predynastic – Old Kingdom)
This History of Ancient Egypt covers over three thousand years of its continuous existence. Participants will investigate the predynastic periods of Egyptian History, look at examples of the earliest known hieroglyphics, and explore the foundation of the Egyptian State. The design and building of the first pyramid at Saqqara will also be discussed. The Egyptian timeline from 2575 BCE to 2150 BCE will be used to examine the fascinating period known as the Old Kingdom when the great pyramids at Dashur and Giza were built. Writing with Lynn Wallace
Prose writing–fiction and non-fiction–doesn’t

without the scene. In this class, you will learn
how the scene can make or break a story. Plus,

written scene as though it is happening right

Foundations of Family History
Discovering your origins can be an enjoyable and rewarding adventure with an expert to guide you around and over the brick walls. This class is an introductory, yet comprehensive overview of genealogy in principle and in practice. William Zehner is a Certified Genealogist, author, speaker and editor of the Florida State Genealogical Society newsletter; he is also editor and webmaster of the Bay County Genealogical Society. How Newspapers Work
The course will include definitions of news, Libel Law, responsibilities of journalists and discussions of how reporters and editors interact. It will show how newspapers have evolved from the Watergate era to online journalism and will attempt to tell class members what they’ve always wanted to know about the news media. David Vest’s career as an editor and writer spans 35 years at newspapers including the Birmingham Post-Herald, The Charlotte Observer and the Panama City News Herald. Jazz – An American Original
Participants will explore Jazz through instruction, demonstration and discussion. Topics include musicianship and composition of Jazz, improvisation, Jazz origins, New Orleans Jazz, Harlem, Swing Era, Bebop Cool Jazz, and Modern Jazz. Location Photography
This course will explore the many facets photography brings to our lives. Topics include travel, animals and birds with off campus trips to various locations. This is a hands-on approach and techniques will give all students the courage to challenge their artistic abilities while having fun. Participants must furnish their own camera and bring it to all classes. Shirley Brown a professional photographer and graphic designer and has been an instructor for Education Encore for twelve years. She also teaches at the Gulf/Franklin Center. Political Science
This class will be taught by several GCCC professors. The professors will emphasize a variety of topics which play a central role in the political institutions of our republic. The specific subject matter of this class will focus on elections, voting, ideology, media influence and future paradigms in politics. Russian History from Peter the Great
This course will take the student on a fascinating journey though Russian history looking at the major events, leaders, and strong personalities of Russia from 1682 to 1905. The line of succession from Peter the Great to Catherine the Great will be examined. The dramatic confrontation of Mother Russia with France after the French Revolution will be studied. The lectures will also review the continued autocratic rule of the Romanov’s including the persecution of the Serfs, Muslims and Jews throughout Russia. The attempts at reform and the unsuccessful revolts against the Tsars will be discussed and how these events lead to the politics of revolution by Trotsky and Lenin. Techniques of Stringing Beads Beginners
This Class is repeated from Third Period. Ever look at fashion jewelry and say, “I know I could make that!”? Take this class and learn to make beaded jewelry with just a few short lessons. This is a project oriented class that is geared to the beginner, but all levels may attend. Each week the instructor will demonstrate a technique. Then, each participant will design and create their own project. The material list will be available at registration. Supply kits will be available on the first day of classes. Mary K. McGraw, owner of Designs by MK, is a local fiber artist and beader. She currently teaches beading at The LH Bead Gallery and has been an Education Encore instructor for many years.
